DINE Stuart Muir and Paul Brennan 2This winter, business partners Paul Brennan and Stuart Muir, former executive chef of Forth Floor Restaurant, Bar & Brasserie at Harvey Nichols Edinburgh, are set to launch a brand new venue – Dine with Stuart Muir – in the heart of Edinburgh’s financial district.

Set to open later next month, Dine will bring to the market a brasserie, champagne and cocktail lounge.  Dine will offer city residents and visitors a unique destination to dine and drink.  The venue will boast a 100-cover brasserie serving contemporary classics and a bar and champagne lounge serving the finest of wines and creatively crafted cocktail menus.

The business partners, who have a combined 60 years of expertise in the hospitality industry, acquired the property set within Saltire Court on Edinburgh’s Cambridge Street earlier this month.  An enviable location set within a unique cultural and financial hub, the venue shares the same building as the Traverse Theatre and is adjacent to the Usher Hall.  The team has set to work on a complete redesign and refurbishment of the property and the new brasserie, champagne lounge and bar will present a stylish setting for morning business meetings, weekend brunches and leisurely lunches to convivial dinners and late night cocktails.

An exciting menu, using top quality produce will showcase the talents of chef Stuart Muir who has built an exceptional reputation in the city following his 13 years at the helm of Harvey Nichols’ Forth Floor restaurant, bar and brasserie.

Working alongside Paul Brennan, who has a wealth of expertise operating profitable and popular bars and restaurants across the UK, the duo are committed to launching a destination venue in the city that presents the very best levels of food, drinks and service in a laid-back luxury setting.

We are working hard on menus that set a new benchmark in the city for relaxed brasserie style dining, and we’re looking for the very best people in the business to join our team.  We want to bring the fun back to food and I’m confident that we will have the right people in place to do so.”

Hospitality entrepreneur, Paul Brennan, added; “City residents will know this space as The Blue Bar which became one of the city’s most popular venues of its time.  It’s a real shame that the property has been empty for almost 5 years.  We’ve had to completely transform the site – rip it up and start again – but it’s allowed us to really build everything from scratch, exactly how we want it.

Guests at Dine will be welcomed into a completely refurbished venue and we can’t wait to share our vision next month.”
