The Courtyard Marriott is not yet open but the hotel has appointed David Watson as its Head Chef where he will oversee eight other chefs to keep all the hotel guests well fed.
David started at The Norton House Hotel where he began cooking fish. He wants to continue the fish theme at The Lantern Room which is the Courtyard’s restaurant and bar. The name comes form the lighthouse designer Robert Stevenson whose family lived in the building at Baxter’s Place.
There will be scallops and halibut on the menu as these are David’s own favourites along with his signature purees, gels and fresh pasta. The 29 year-old David will use modern cookery with locally sourced produce to produce his very own eclectic mix.
The hotel is the third Courtyard by Marriott in Scotland and is owned by the Chris Stewart Group who have redeveloped the building which lay empty for some time.
