The Radisson Collection Royal Mile Hotel is celebrating summer this year with a pop up gin bar featuring Rock Rose gin which comes from the northernmost gin distillery on the British mainland.

The hidden terrace lies beside the hotel’s Cucina restaurant and hopes to attract a wide clientele of festival-goers, tourists and city dwellers. The bar will be open from 12 noon till 10pm and the Rock Rose expert mixologists will fix you a cocktail from their wide range.

One of the cocktails is called A Bee’s Journey, and highlights the importance of bee preservation and awareness. It was designed by the mixologists and was inspired by the hotel’s rooftop honey bees.

Every cocktail is served with a pack of wild flower seeds which can be sown to help more bees survive.

Food is also served on the terrace including vegan or traditional afternoon tea, and lunch and dinner menus.
