Grilled Chicken with Mustard

Takes about 40 minutes

Get the BBQ out. Make sure it is clean.

Put 4 teaspoons of mustard seeds in a frying pan and toast them till they crackle. Put them in a large bowl. Add 8oz of green beans either fresh or frozen, similar amount of thinly sliced green cabbage, 1 small thinly sliced onion and 1 tablespoon of fresh tarragon.

Whisk 2 tablespoons of olive oil with same amount of balsamic vinegar and 2 teaspoons of Dijon mustard in a bowl. Mix in with the cabbage and beans to make a very green coleslaw.

Whisk an egg white and a good 2 tablespoons of mustard in a small bowl. Season the skin of 4 chicken breasts with salt and pepper. Brush them with the mustard and the mustard seeds.

Put the chicken on the BBQ skin side down. Grill for about 5 minutes each side or until cooked through….check with a skewer that it is!

Serve both together – preferably with some fat fries too unless you are on a diet…..
