Building has begun again at Edinburgh St James, and now we have heard that a new 16,600 square feet food hall will be set up there. This will be called Bonnie & Wild, and will include restaurants alongside fresh and packaged food and drink provided by a variety of artisan butchers, fishmongers, grocers, cheesemongers, chocolatiers, bakeries and three new bars.

The food hall will be on level four of the development showing off the best of Scottish food and drink. You are also promised that this will be a theatrical experience with flights of whisky on offer, salmon being carved in front of you and the opportunity to have a shot at Smoky Barrels- a virtual shooting range.

Bonnie & Wild will be the first Scottish food hall developed by Mac & Wild which is well-known in London and will bring their unique artisanal concept to the newest shopping development in town. Interior design will be by Studio Duncalf and it will also sit next to the new W Hotel at the heart of Edinburgh St James.

Ed Corrigan at Edinburgh St James said: “We partnered with Bonnie & Wild because of the pedigree of their team and their passion for quality Scottish produce. They know Edinburgh inside out; they have fantastic connections with Scottish farmers and producers, but have also travelled across the globe scoping out the top food markets in the world. The signing is hugely significant because it shows that even in a climate of lockdown uncertainty, Edinburgh St James, and the city, has lost none of its appeal. Scotland has some of the best produce in the world and this will be the best location in Scotland to showcase it.”

Andy Waugh at Bonnie & Wild, said: “Edinburgh St James is the perfect location to launch Bonnie & Wild.  We love the fact that it is rooted in its community but has a global outlook. Our vision is to bring the best of Scottish produce to the local community as well as visitors from further afield, and we are so excited to create a platform for some of Scotland’s most interesting traders. We cannot wait to share more details about our plans and the traders we will be working with. And yes, we will be bringing our award-winning Venimoo burgers.”

Bonnie & Wild is a food hall focused on Scottish produce. The project is headed up by Andy Waugh and Calum Mackinnon, founders of Scottish restaurant group Mac & Wild. Located at Edinburgh St James, Bonnie & Wild covers 16,700 sq. ft. and will be the largest single F&B site in Scotland. Across the concessions there will be 5 retail offerings; 8 food stalls including Mac & Wild; and “virtual shooting” at Smoky Barrels. The drinks offering will be similarly expansive with 3 unique bars serving an array of alcoholic and non-alcoholic craft Scottish products. Bonnie & Wild will run a rotating events program taking advantage of its “demo kitchen” and adjoining PDR / events space. A children’s creche and play area is located near the entrance for the convenience of young families.
