Luxury hotel unveils 40kg Rabbit-inspired centrepiece for guests
A GIANT carrot-shaped chocolate sculpture has been unveiled for Easter at a five-star Edinburgh hotel after taking more than 40 hours to create.
Made using around 40kg of chocolate, the sculpture at Sheraton Grand Hotel & Spa features a beloved Easter rabbit character beside an oversized carrot, bringing a classic springtime story to life as a stunning seasonal centrepiece.
The eye-catching piece was created by expert chocolatier Chef Raymond and is equivalent to hundreds of individual Easter eggs.
With more than 20 years of experience in luxury hotels in Hong Kong, Kwong has developed his craft working alongside world-class chefs in high-end kitchens.
Chef Raymond said: “Chocolate is a very versatile material and working with it feels like creating a piece of art. At the same time, you have to manage time, temperature and detail all at once.”
“I’m grateful to Chef Stuart, Chef Tomas and the Sheraton team for giving me the support and space to express my creativity. Projects like this only come together when you have that backing.”
He said each project presents a new challenge, particularly when balancing creativity with tight deadlines.
Adding “Each project is a new learning curve for me. Completing a piece under pressure and seeing a strong response always makes me proud and keeps me motivated.”
It also places a spotlight on the culinary capability within the hotel’s kitchen, where presentation and technical skill play a key role in the overall guest experience.
Chef Tomas, from Sheraton Grand Hotel & Spa, was recently shortlisted and highly commended as Patisserie Chef of the Year at the Scottish Excellence Awards, underlining the strength of the team behind the project.
The sculpture will also take pride of place during the hotel’s Easter Sunday Lunch, where each table will receive a homemade chocolate egg as a special seasonal treat. One lucky guest dining on Easter Sunday will also have the chance to win a £200 Sheraton Gift Voucher, redeemable across One Spa and One Square.
Set in the heart of the capital, Sheraton Grand Hotel & Spa celebrated its 40th anniversary in 2025 and remains one of Edinburgh’s best-known luxury hotel destinations.

The display is expected to attract interest from both hotel guests and visitors to the city over Easter and will be on display across the Easter period.
