Named in honour of the conductor of the Palm Court Orchestra at Patrick Thomson’s, the late lamented store on North Bridge, a new bar is open now.

Herbie performed in the department store for about four decades, bringing theatre and flair to his musical performances. The venue channels that same spirit through the vibrant atmosphere, creative cocktails and elegant interiors, all designed by Cunningham McLean.

Cocktails feature the bar’s own brand Conductor’s Batch Gin made at Summerhall Distillery. There are also rare malt whiskies displayed in bespoke whisky cabinets. Guests may have their own locked whisky cabinet with special frame which can only be drunk by them or their family.

The food on the menu is all Scottish produce and locally sourced.

The bar is an integral part of the £20 million renovation carried out to the Hilton Edinburgh Carlton following investment from Henderson Park and its in-house asset manager Klarent Hospitality.

The hotel now features a new breakfast room, executive lounge, two meeting rooms, an extended lobby and fitness suite, as well as 58 new bedrooms. By the end of the year, a further 28 bedrooms will be created on a new rooftop level, further enhancing the hotel’s facilities for guests. On completion of the rooftop level the hotel will have 297 bedrooms.
